Apricot Mojitos

It's been hard to get back into the swing of blogging. I was on vacation last week during the Fourth of July holiday.

Before I left I was inundated with apricots and now I'm inundated with rotting apricots that my dog, Aster has mostly ignored. Unless, she has a stronger constitution than most dogs overeating fruit. I've been trying to get them picked up before she decides they're tasty morsels. 

The Thursday before my vacation, I picked as many as I could and brought most of them to work for my co-workers. The few I saved I made an apricot crisp with a recipe I found in Sunset magazine.
In addition to the apricot crisp recipe, I also tried making apricot mojitos. It's my personal twist on the refreshing lime and mint Cuban cocktail. 
Apricot Mojito
1 oz of brandy (less or more to taste)
3 small apricots or 1 store bought apricot
12 mint leaves
2 wedges of lemon
4 oz of club soda
sugar or simple syrup to taste

Muddle ripe apricots, brandy, and mint leaves. I use a mortar and pestle. Pour over a glass full of ice. Add club soda, sugar or simple syrup to taste. Squeeze juice from lemon wedges and stir. I wish I'd had the time to can or freeze the apricots before I went on vacation. However, the apricots mojitos were a yummy pre-vacation cocktail to start my summer fun at the beach. Cheers!

  1. I bought this year only a kilo of apricots, they were very tasty. I must go to market, while there are still. The mother of my ex-husband does not have any this year, froze.

    1. Daniela, my apricots usually freeze. I think the fruit trees were just lucky this year.

  2. Sounds good. Hey have you ever tried drying them? One of my favorites is dried apricots. I think you have to buy a machine to do that though, but they are so worth it.

  3. The crisp and the mojito both sound good! I hope you had a nice vacation. From that beach picture, it looks like it was relaxing and the mojito was a good way to kick it off.

    1. The vacation was the pick me up that I needed to recharge me for work. The beach was great I got to see family and old friends of the family.

  4. Now that is a cocktail. And apricot crisp...oh my my 2 favorite things...apricots and crisp...I love your beach image...sounds like a great vacation. I have to learn to actually take one.

    1. Donna, taking a vacation is a good thing. It keeps me from getting burned out. The crisp turned out well. I might have to try it with other stone fruits.

  5. I love apricots...fresh, dried or cooked. I will have to try the Mojito. Great that you can grow them and have such good production. The beach is calling my name!

  6. Mało owoców na drzewie to smutek, ale nadmiar też bywa kłopotliwy. Ja bardzo lubię morele, ale świeże, nie suszone. Na plaży ze zdjęcia z radością bym posiedział. Pozdrawiam.
    Little fruit on the tree is sad, but sometimes too much too cumbersome. I really like apricots, but fresh, not dried. On the beach with images of joy I sat. Yours.
